The latest version of The Final Countdown has a segment where the pilots talk about the filming. They had quite a time going slow enough for the Texans painted as Zero's to keep up. They were going slow while the film zero's were pushing the throttle to keep near equal speed. The one scene where the F-14 loops over and dives at the ocean was reported by some to be a very close call. He hit his afterburner to keep from dunking it. The pilot on the DVD says with a smile it was not as low as the film made it look to be.... but it was a bit low. For the sound effects, they taped the pilots wife screaming as she watched it and looped the sound into the afterburner sound effect.
I believe they swept back the wings for the mean feel effect it invokes looking at the pursuit. But for dogfighting at close ranges, they had to keep the wings extended out to keep at speed with the older era planes.
